Ingredients:
- 8 oz whole wheat pasta (penne or spaghetti)
- 1 small zucchini, chopped
- 1 medium red bell pepper, chopped
- 1 small eggplant, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- ¼ cup homemade or store-bought pesto
- 2 tablespoons grated Parmesan cheese (optional)
- Fresh basil leaves for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Spread the chopped zucchini, red bell pepper, and eggplant on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the preheated oven for 20–25 minutes, or until the vegetables are tender and slightly browned, stirring halfway through.
- While the vegetables roast, cook the whole wheat pasta according to the package instructions. Drain and set aside, reserving 1/4 cup of pasta water.
- In a large mixing bowl, toss the cooked pasta with the roasted vegetables.
- Pour the pesto over the pasta and vegetables, adding reserved pasta water a tablespoon at a time until you achieve your desired sauce consistency.
- Serve the pasta with a sprinkle of Parmesan cheese and fresh basil leaves for garnish.
Tips:
- Feel free to add other vegetables like cherry tomatoes, mushrooms, or spinach to the roast.
- Skip the Parmesan cheese or use a vegan cheese alternative.
- dd grilled chicken, chickpeas, or tofu for added protein.
- Add a squeeze of fresh lemon juice or a drizzle of balsamic vinegar to enhance the dish.
- Add red pepper flakes or a dash of hot sauce to give the dish a bit of heat.
- Store leftovers in an airtight container for up to 3 days. Reheat with a splash of olive oil or water to keep the pasta moist.
